Madigan made... a mango lassi smoothie.
This time of year I love yogurt and fruit smoothies.
I often add mango to smoothies (like I shared waay back in this post).
But until recently, I never had a mango-only smoothie. I was just introduced to a mango lassi at a recent dinner last month. Yum!
A mango lassi is a South Asian drink made with mango, yogurt and sugar. A pinch of cardamom or ginger can be added when serving.
I did not have cardamom on hand, so I used a sprinkle of cinnamon. I had leftover mint from a recent recipe (more on that in the coming weeks) and added it as a garnish. (Love mint and fruit!) You could also garnish it with chopped pistachios.
I'm told the traditional way to make a mango lassi is with mango pulp. I read that using fresh mango could be risky and taste chalky if the mangos are not really ripe.
I used 2 ripe mangos to make mine at home and it turned out pretty good. But considering how I do not always have ripe mangos on hand, using mango pulp sounds more convenient. So, I may try to find some to keep when I get another mango lassi craving!
Mango Lassi Smoothie

2 mangos (peeled and diced)
1 6 oz container plain yogurt
3 tbsp sugar (add more to taste if want it sweeter)
Pinch of spice, if desired (cardamom, ginger or cinnamon)
Garnish, if desired (i.e. mint or chopped pistachios)
Blend: Using an immersion or regular blender, blend the first three ingredients.
Garnish: Add a pinch of spice and garnish on top, if desired. Serves 2.
Enjoy!Note: I used Greek yogurt which is already very thick. I prefer a thick smoothie. But if you do not, I imagine adding ice or milk to the lassi would thin it down.
