Madigan’s mom made… a simple and sweet treat!

Cookies dipped in chocolate? Yes, my friends, we are gilding the lily a little today!
Remember earlier this month when I told you about the easy turtle pretzel bites my mom made around the holidays? Well, she also made these really simple chocolate dipped Nilla wafers.
My mom just melted chocolate and dipped the wafer cookies halfway in. So simple!
Don’t they look like half-moon cookies? My mom says that the mini-wafer size is even easier to eat and pop in your mouth, so I’m going to try those little cookies when I make these treats.

My mom’s advice is always to use really good dipping chocolate when making these treats and I agree with her. Avoid the cheap waxy chocolate from the craft store or chocolate chips. Invest in good dipping chocolate from a local candy shop or keep your eyes peeled around the holidays for quality dipping chocolate. My mom looks for Ghirardelli dipping chocolates and I’ve used Merckens candy wafers.
And I have to tell you… these little bites were sooo yummy. Everything’s better when you add a little chocolate, right?
